METHOD

  1. Make sugar caramel
  2. Add cream
  3. Whisk
  4. Add passion fruit
  5. Blend
  6. Sieve
  7. Place into mold
  8. Melt chocolate
  9. Whisk egg whites to stiff peaks
  10. Use the yolk to make a zabaglione
  11. Whip cream
  12. Fold all ingredients
  13. Freeze
